Roasted Spaghetti Squash:

Ingredients:

  • 1 Spaghetti squash
  • 2 tsp. olive oil
  • salt and pepper

Directions:

  1. Pre heat oven to 400 degrees and line a cookie sheet with aluminum foil sprayed with cooking spray
  2. Cut spaghetti squash in half lengthwise and scoop out the seeds
  3. Brush 1 tsp. of olive oil onto the top of each and sprinkle with salt and pepper
  4. Place squash cut side down onto the cookie sheet and put in the lower third of the oven
  5. Bake for 1 hour, remove from the oven and let cool for 15 minutes
  6. Using a fork, scrape the squash out of the shell and place on a paper towel on top of a place for 20 minutes to drain some of the liquid

Lean Turkey Meatballs:

Ingredients:

  • 1.25 lbs. of 99% lean ground turkey
  • ¼ cup seasoned whole wheat bread crumbs
  • ¼ cup grated Parmesan cheese
  • 2-3 cloves minced garlic
  • 1 tbsp. dried parsley
  • 1 large egg white
  • salt and pepper

Marinara Sauce:

  • 2 tsp. olive oil
  • 1 28oz. can of crushed tomato
  • 1 6oz. can of tomato paste
  • 6oz. of water
  • Half of a large red onion chopped
  • 4 cloves of chopped garlic
  • 2 tsp. dried parsley
  • 2 tsp. dried oregano
  • 1 tsp. red pepper flakes (optional)
  • salt and pepper

Directions:

  1. Heat a large sauce pan over medium heat, add olive oil and let heat for approximately one minute
  2. Add the onions and garlic to the pan and sauté for approximately 3 minutes
  3. Add the crushed tomatoes, tomato paste, water and spices
  4. Stir together and lower the heat to low
  5. While the sauce is simmering, combine all of the meatball ingredients into a large bowl and mix together with your hands
  6. Using a 1.5 tbsp. cookie scoop, form meatballs into small circles
  7. Once all of the meatballs have been formed, gently place them into the pan and cover
  8. Simmer meatballs for about an hour (the longer you simmer the better)
  9. Serve meatballs on top of the spaghetti squash and sprinkle with grated parmesan cheese

"Healthy" Brownies:

Ingredients:

  • 1 box of store bought brownie mix
  • Egg whites (use 2 egg whites for every egg called for in cooking instructions)
  • Unsweetened apple sauce (replace oil with equal amounts of apple sauce)
  • Water (use the amount that is called for in the cooking instructions)

Directions:

  1. Preheat oven to 350 degrees  (or the temperature indicated in the cooking instructions)
  2. Spray a 9x13 pan with cooking spray
  3. Combine brownie mix, egg whites, water and apple sauce in a large bowl and mix until well blended
  4. Pour batter into the pan and bake for the time indicated on the box
  5. Remove from the oven and let cool for 15 minutes before cutting
